Andreas decreed that we would have an all-vegan dinner at our wedding. I put up a tiny argument (”But I’m not vegan!”) but ultimately I sympathize with the fact that he is very rarely in an environment where everything is vegan. If there’s any any event that should cater to his diet, it should be his wedding. Our wedding.
Plus, with a menu like this, I don’t think anyone will complain..
Entrees
Stuffed portabella mushrooms with garlic basil filling • Stuffed zucchini with spicy tomato filling • Grilled tofu marinated in secret smoky sauce
Sides
Couscous, garbanzo beans, carrots, and broccoli, with a ginger vinaigrette • Greek country vegetables in a zesty tomato sauce
Salads
Greek salad with cucumber, tomatoes and red onions in a balsamic vinaigrette • Green salad with baby greens and homemade dressings
Dessert
Carrot Cake, both rich vegan and sinfully non-vegan

Thanks for sharing the menu. My partner and I are planning a non-wedding which will have several vegan attendees. We didn’t want our vegan friends to suffer through the same boring fruit and veggie trays that they probably have to eat at every other event and I suspect your very non-boring vegan menu will be quite helpful.

Yum!
I attended the wedding of two vegetarian friends last weekend, and they served lots of meat. I understand why, but frankly I was disappointed. Omnivores aren’t going to croak if they have a meatless meal, and if you serve ‘em great veg food, they just might like it!
