I am not vegan, but every now and then I eat vegan food that tastes so good that I appreciate it simply for what it is (rather than what it isn’t). This exceptionally simple recipe is one of those times.
Soynog French Toast
2 cups Silk Nog soy eggnog
Generous sprinkling of fresh ground spices like nutmeg and cinnamon
1 tablespoon of flour
A few slices of your favorite squishy bread (potato bread, french bread, whatever)
Mix together Silk Nog, spices, and flour. Soak bread in soynog mixture until saturated. Fry like you would normal french toast. Enjoy with thinly sliced fruit on top. You won’t need syrup because the soynog is already pretty sweet. SO GOOD! Special thanks to the PCC checker who suggested we try this.

I like to add a tbsp or 2 of nutritional yeast to give an ‘eggy’ flavor and a tsp(or less) of salt helps give it a savory undertone. I like the nog idea, mmmm

what do they put in the soynog to give it that gelatinous slippery feel of eggnog?

Here’s the ingredient list: organic soymilk (filtered water, whole organic soybeans), naturally milled organic evaporated cane juice, natural flavors, sea salt, carrageenan, annatto (vegetable color).
I’m guessing it’s the carrageenan that gives it that thick “mouthfeel.” I loooove Silknog. It’s so awesome to drink eggnog and not feel have that two-ton boulder feeling in your stomach.

I saw on someone else’s blog that they referred to Silk Nog as “SNOG!”
I so love that and am adding it to the spicy lexicon…
